Quinoa (pron. Keen wa)

Although not a true grain (it is a member of the same plant family as spinach), the seeds of the quinoa plant can be used in the same way: ground to flour to be used in baking, rolled into flakes (like tiny rolled oats), or used whole e.g. served in place of rice or bourghal (cracked wheat).
Quinoa is low in carbohydrates and high in protein compared with most grains. An excellent addition to a vegetarian diet as it is a complete protein (i.e. it contains all essential amino acids), which is something that only animal derived products (e.g. meat and dairy) can attest to.
